Mommy Mondays: Mother's Day

Hello! Happy Monday! I hope all of the mothers that are reading this had a really great Mother's Day yesterday. I spent the day with both of my boys and couldn't ask for anything else! I wanted to take a picture of us all day and I finally got one last night after AJ had his bath and HD and I were both if our pjs. This picture was taken right after AJ spit up all over me (for the second time that day). Oh, the joys of being a mom!
I just wanted to share a poem that I saw a friend of mine post on Facebook yesterday that just says it perfectly what it means to be a Mom. The author is unknown.
Before I was a Mom -
I slept as late as I wanted and never worried about how late I got into bed. I brushed my hair and my teeth everyday.
Before I was a Mom -
I cleaned my house each day. I never tripped over toys or forgot words to a lullaby. I didn't worry whether or not my plants were poisonous. I never thought about immunizations.
Before I was a Mom -
I had never been puked on - Pooped on - Spit on - Chewed on, or Peed on. I had complete control of my mind and My thoughts. I slept all night.
Before I was a Mom -
I never held down a screaming child so that doctors could do tests...or give shots. I never looked into teary eyes and cried. I never got gloriously happy over a simple grin. I never sat up late hours at night watching a baby sleep.
Before I was a Mom -
I never held a sleeping baby just because I didn't want to put it down. I never felt my heart break into a million pieces when I couldn't stop the hurt. I never knew that something so small could affect my life
so much. I never knew that I could love someone so much. I never knew I would love being a Mom.
Before I was a Mom -
I didn't know the feeling of having my heart outside my body. I didn't know how special it could feel to feed a hungry baby. I didn't know that bond between a mother and her child. I didn't know that something so small could make me feel so important.
Before I was a Mom -
I had never gotten up in the middle of the night every 10 minutes to make sure all was okay. I had never known The warmth, The joy, The love, The heartache, The wonderment or the satisfaction of being a Mom. I didn't know I was capable of feeling so much before I was a Mom.

Sun Dried Tomato Bacon Pasta
I made this last night for dinner and it was delicious! And easy! :)
Sun Dried Tomato Bacon Pasta (click here for printable recipe)
Ingredients
1 large shallot, diced
4 garlic cloves
1 pound of thick-cut bacon, cut into small pieces
1 tablespoon olive oil, if needed
1 (10 oz) jar of sun dried tomatoes in oil
1 can cream of celery soup
1/2 cup of heavy whipping cream
1/2-1 cup of milk
1 package of spaghetti
Salt and pepper if needed

Directions
Dice the shallot into small pieces and then set aside.
Cut up the bacon (using a kitchen shear is the easiest way) and cook in a large skillet.

When cooked, place on a plate with a paper towel to drain off the grease.
If you have a little grease left in the skillet that is fine.
Throw the shallot into the skillet and cook for 2-3 minutes until it becomes tender. Add the olive oil if needed.
Add the garlic and cook for another minute.
Meanwhile take the sun dried tomatoes out of the jar and roughly chop them. Drain the oil out of the jar but reserve the extra spices that remain in there.
Add the tomatoes and spices to the onion and garlic. Mix well.
Add the can of cream of celery.
Pour in the heavy whipping cream and mix well (you could leave the heavy whipping cream out and just use milk, but I had a little left in the frig that I wanted to get used).
Add milk to thin the sauce to desired consistency.
While sauce is simmering, cook the pasta according to the package directions. When the pasta is done, drain well and then add to the sauce. Stir together.
Place pasta in a bowl and top with the cooked bacon. Add salt and pepper if needed. (I did not need to add any since our bacon was salty enough.) Enjoy!

Snow on May 2nd!
We did get some snow last night. It was the heavy, wet kind and from what I hear from numerous people the roads were pretty bad too. We are suppose to get some more rain/snow tomorrow night. This will definitely keep the farmers out of the field for a few days!

It was a high of 48 degrees this morning and dropped all day. We got a tenth of an inch of rain last night, another .25" of rain by 5pm today and it's been raining harder ever since then. We are now in a Winter Weather Advisory until 10am tomorrow morning. The rain is suppose to turn into snow this evening and we could have 2-5 inches of snow on the ground by morning. This is the complete opposite from last year.
Here's to hoping it clears up some so the farmers can get in the field to start planting soon!
